Chiara Dall’Asta is Associate Professor of Food Chemistry at the Department of Food and Drug, University of Parma. Her expertise is in the area of the chemistry of natural substances, with special focus on bioactive compounds in food. Her main research topics are: 1) Identification, characterization and study of the in plant and in vivo metabolism of parent and modified mycotoxins; 2) advanced MS methods in metabolomics and lipidomics; 3) untargeted approaches for food safety and authenticity; 4) characterization of the mechanisms responsible for the biological activity of bioactive and toxic compounds in food.

Since 2014 she is member of the several EFSA WGs in the frame of the CONTAM Panel. Since 2016, she is Chancellor’s representative for the liaison between UNIPR and EFSA. Since 2019, she is Chair of the PhD course in Food Science, University of Parma. She is co-author of more than 160 publications on International ISI peer-reviewed journals.
